It looks super easy to make, and probably slightly preserves the milk, since theres already so much bacteria in it.

Around me about a pint of greek yogurt that only contains yogurt and bacteria is about $5!!!!
A gallon of milk is cheaper than $5.........

Edit: i wonder if one could make some using coconut milk or the like
