Is there a function by which we can see the text of our sent messages?

I looked for it: it's possible I'm blind, but if not, I feel like that would be really good to have.

Yes. It's in there. Click on messages at the home page.  Then at the top of your list of messages there is a thing that says "Messages Actions Prefferences"  Hover over "Messages" and a drop down menu will show up.  From there hit "Sent Items"

"sent items" folder.

but you have to click the "Save a copy in my outbox" on every message you send that you want to be saved

If it has to be clicked for each message you want to save, but you want to do this automatically, do this:

place the mouse over the “profile”  tab, click account settings, put the mouse over “modify profile” tab, click “personal messaging”  tab, then click the check box reading “Save a copy of each personal message in my sent items by default.”

^  will fix that.
