Harvesting Epazote seeds

So I planted these seeds late spring not knowing it is an annual plant and prone to bolting. Was gonna cut back the flowers but I doubt it would help it grow larger without dying.

So it has been flowering for the past month+ and am wondering how I know the seeds are ready to harvest. Do I just wait until some fall or does the plant start to dry?

If they start falling its time! I have harvested them early as well with good germ rate. Dont let them go wild!
